Oregano! A cooking must!

Oregano is the one herb that I always have. This herb works so well in so many different situations. Oregano’s origin is from the Mediterranean and is used in many Greek, Italian and Spanish dishes. Oregano is a must in many Greek dishes, be it meat, fish or vegetables, oregano is perfect for a simple fast marinade.

The herb can be used either fresh or dried but beware the fresh herb, the taste is very strong! I have had my Greek Oregano plant for about 3 years. It’s a perennial herb which means it can survive our winters. Throughout history oregano has for the treatment of colds, influenza, fevers, fungal infections, indigestion, stomach upsets, enteric parasites, and painful menstruation.

A quick simple marinate for meat would be oregano, olive oil, salt, pepper…mix together in a small bowl and marinate…I suggest you pick some up, it’s cheap and adds a lot of flavor!

I SNOOZE!


This morning I wanted to share a funny story! So I always always have an alarm on cause there is always something to be done early! If its not work, its Saturday morning appointments or church on Sundays. My hubby HATES the sounds (the many sounds) of my alarms… First of all I have 2 of them to make sure I wake up and second I have this REAL bad habit of snoozing for at least 30 to 45 minutes. I’ve tried to wake up right away but I just can’t help it! Does any one have the secret to being able to get up right at the sound of your alarm or even better, does any one have the secret to waking up on time with out the alarm??

To Do List Part 2: You need a Due Date

Alright, the papers I have sitting everywhere are now all put on the separate To Do lists that I wrote about in my last blog.

Now the next big step is making sure we have due dates or time-lines to get the tasks done. Why do we need a To Do list with dates/times for each task? For many reasons, including the fact that if there is no deadline or set time we will do the task….it will never get done.

I don’t know about you but after looking through all my loose papers I have realized how many things just live on my To Do lists. They have been things that I need to and would like to do for so long. So why are they still on my list? Because they do NOT have due dates.

Since we have separated our lists into: Today, This Week, This Month, Next 3 Months, etc etc, we are giving ourselves a due date to follow. So take your Today list for example. If you have 5 things on your list, jot down when you need to get those tasks done. This can be an exact time or a deadline to help you stick to getting it done.

Alright, I’m off to sleep which is the next thing on my To Do list tonight.

Weekly Dinner Planner


Planning your dinner for the week is one action that will save both time, stress and help eliminate that “What’s for dinner” question! There are many things to consider when planning your meals for the week.

Things to consider when planning your meals:

  • Nights where someone is working late
  • Going out to the parents, friends or restaurant for dinner
  • Wild Card Night (one night during the week you order out)
  • Nights when you have time to cook and those you don’t

What we do is each Sunday night we plan our meals for the week. We check what we have in the fridge and freezer and work with that. This way if there is a special meal you want to make you can see right away if you need to head to the grocery store. Most important is having your meal plan accessible. There are many tools you can use to record your meal plan, I find that Google Calendar is the best because you can access it from home or work.

Shoes Shoes Shoes!!!

Hey followers! I gotta apologize for having fallen off the planet for the last 2 weeks. I do miss sharing and caring with you all so I’m BACK!

I wanna talk to you guys about my most recent dilemma. So I had 4 shoes with me at the cash register and decided I can only leave with 2 (the ones ON SALE) so that my loving husband doesn’t flip out (not that he would – better be safe than sorry) when he sees that I got 4 pairs of shoes in one outing.

I’m not one of these girls who have to buy a pair of shoes every time she goes to the mall, but I do know that for some of my newly wed friends this specific issue causes some tension at la house!

For some people, shoes make or break an outfit so the pairs start to pile up! I gotta be careful, the only pairs of shoes I can buy that fit me properly are the shoes at Nine West and those can get expensive. Nine West is the only place where they have many of my perfect little Cinderella size 5 1 /2. The shoes last me a good while and even with my heavy walking the heals dont give up on me too quickly! Gotta say I’m a big fan of Nine West!

I couldn’t keep walking around in my winter /spring boots! I had to get a few new pairs. Right? What’s your shoe collection like? Or better yet, for you men out there, tell me how you feel about your ladies collection.
Do you all agree with Forest Gump? Can you tell a lot about a person just by their shoes?

How many is too many?

A few weeks ago I mentioned Super women and how to organize our time as married working couple and possible kids in the future. So I’ll get back to that as soon as I can figure it out what the married truth is about how to pull it all off!

To Do List Part 1: Make a NEW To Do List

Ok its official, my To Do list is a To Do book!!! Between work, home, car, projects and my part-time work- the lists never end. I have little pieces of paper everywhere I look. I think I spend more time making lists than actually getting what is on the lists done!

My husband and I have been experimenting with different list writing techniques. When we do not have a good list, things can get ugly. Bad lists = bad fights with Jason and I.

We have recently learned that list writing is a technique that needs to be mastered. I am not quite there yet but join me on my quest to create the perfect lists.

The first thing I am going to do is split my pieces of paper up into the following lists:
1- Today
2- This Week
3- This Month
4- Next 3 Months
5- This Year
6- Eventually

I’m going to get started on my new TO DO list creation. Start yours too and let me know how it goes!

Next step is putting a due date on your tasks.

Live life to its fullest….

Tonight my twin cousin Kathy came over for some good old quality time together. We cooked a veggie pasta that she saw Rachael Ray make.

I call Kathy my twin cousin because we grew up very close and not to mention we do look similar (which is a huge compliment for me cause she is a beauty!) Tonight was just a reminder to me about how important it is to spend time with those that mean a lot in your life. Sometimes life gets in the way and we forget to actually LIVE each moment to its fullest!

This coming August Kathy is getting married and we won’t be living as close as we always have, which reminds me that in our busy busy lives we NEED to make time for our close family and friends. Just a quality hang out every so often or even a thoughtful phone call or email. In my opinion, a healthy relationship with our friends and family is one of the most important aspects of our mental health.

Just for the record… Kathy and I made a fabulous veggie pasta thanks to Rachael Ray and had some cousin catchup time!

Beach Wedding

Hello Truth Seekers!
Sorry I fell off the earth and haven’t blogged in a few days. I was in Florida this past weekend to celebrate the marriage of my husband’s cousin. Congratulations Andrew & Annie.

The wedding was an intimate beach wedding. We all gathered around the couple to witness their love and vows to each other. It was my first beach wedding and it was so special.

On that note- for all you brides and grooms to be, how is the wedding planning going? Where do you plan on having your wedding? Any new ideas? Searching for help or tips for your wedding? Shall we have wedding talk weekly?

Superwoman!

For all you superwomen out there! I wanted to write you all a word of encouragement!
I know of a woman, 25, planning her wedding, her fiancé is working with the U.N on a mission, she is studying to finish her masters, taking care of the selling her house, and I think there may be one more thing she’s doing… It’s just slipping my mind.

Anyways, to her and every other superwoman out there who may not necessarily be doing all these things but who is doing her share of juggling’! I say keep at it! It’s the only thing that keeps us young and moving forward! Keep learning, growing, loving, and giving back to the people around you!

Don’t get discouraged, don’t give up! When you feel overwhelmed with all the juggling just remember that our shoulders where created a tad bit stronger than men’s in order to carry the everyday tasks of the world!

Don’t you sometimes wish there were more hours in a day or sometimes think “how did I do all that in one day?”

I’ll soon be sharing with you some helpful tips on how to organize your time. Making the best of it and still having enough of a balance to have quality time with your loved ones, all while enjoying the activities that make you happy like your girlfriends evenings out and date night with your hubby!

When To Say NO…

Do you have parents, friends, family that always gives you fabulous leftovers? My hubby and I are so lucky to have great family that are always making lots of food and sending us leftovers. We constantly have food, sometimes too much.

Jason and I love cooking and eating together but sometimes it feels like we shouldn’t cook because we would be wasting food since we have so much in the fridge already.

What do you do? Graciously take the yummy leftovers and be thankful or do you say no thank you and get cooking by yourself? Why is cooking for yourself even important? I mean, I realize that at some point we might not be so lucky to have all these great leftovers and delights in our fridge, so does it make us lazy to just accept them and enjoy them while we can?
